You know these are not any regular double chocolate cookies when the aroma alone suffice in intoxicating you. These Korova Sablés are very intense dark chocolate cookies with melted dark chocolate pieces in between bites. They will be quite hard to put down once you start. I choose to use a 76% dark chocolate rather than a 50-ish% or milk chocolate because it goes better with the sable base. The latter would make each bite too sweet.

In French, sablé means sands. And these sablés have a buttery sandy mouth-feel that melts in your mouth. Also known as World Peace Cookies, these chocolaty morsels, highly regarded by some, are deemed to ensure planetary peace and happiness!

The cookies will keep well in the airtight kraft pouches or Le Parfait glass jars for a couple of weeks.
